What is the reasoning behind making them taller? If it's just aesthetics, I think they're fine as they are.

Corn or maize grows to that height after millennia of primitive genetic engineering.

 

Then there's the newer GM where the fun really begins. :D

This could realistically be done for a few crops. I think the reasoning for the shorter corn/grains is just for the sake of practicality, since it would be sort of a pain to farm sometimes if you couldn't see past those tiles well.

+1, but only if i can make crop circles and my wagon will cut a trail through like the picture :)

Taller fields for certain crops would be nice aesthetically, but would also be a pain when farming, since items and animals would get lost in them easily and you'd have trouble seeing through to other field tiles.

+1 Would be nice to look outside a 2 story window and see more corn/grain than dirt in the fields.

Nah, then everybody will think they're ripe way to early when they get barrel height.
