Funny you should mention Ultima. It was a great game back in it's day, I spent quite a few years there. It pre-dated Wurm by well over a decade. My son was a mere toddler then and he's 18 now. Surprised it is still around at all. I wouldn't add it to the list of games that failed to challenge Wurm just because it is so much older than Wurm is. It was THE Game at it's peak, now it is more like history.

I can only give my own experience on two Wurm servers. I started on Release as I was told it was a good server for new people. The area around the spawn point then had nothing there was no mine and people had deeded all clay in that area, thus I joined a village. Village #1 allowed me to sleep and work in a small flooded mine giving me no access to anything else in the village. I had to make my own tools and meals. I created a small cart there as I was tasked to finish their outside walls. I worked like a demon there only to be accused daily of taking things from the village (remember I didn't even have access to things to take) just because I was new there. I finished their walls only to find they had no further use for me and I still only had guest access there so left behind the cart and anything else I had made while there and moved on. Problem seemed to be a nearby settlement that took anything not nailed down from their neighbors. Village #2 I joined and was made a miner for a smith that was too lazy to mine for himself. Mined lots of ore every day but was yelled at if I tried to do anything BUT mine. At least I was allowed access to a bunkhouse there for sleeping. Yep, again I was just a slave to be taken advantage of. So a very bad experience on that server. Returned to the spawn point and created a public mine, discovered 4 iron veins for people to work then logged off. Left that server in better condition then when I found it. Would have given up on Wurm entirely had I not decided to see if ALL the servers were like Release was.
Made a char on Indy and have had a great experience there. Was taken in by a man named VcBoy to live in his village. Good experience there. He was very helpful. Let me work on anything I wanted to so I got to try lots of skills and decide what I liked to do. I repayed his generosity with a referral and always found lots of village improvement tasks to do like repairing fences, grooming animals, farming and making food for other villagers. Thanks Vc!
Presently, I live at the Kalayaan Village with Alaskan Bob and many others. It's a great place to live also on the Indy server. There I now have a house of my own, horses, crops to tend, able to help other villagers to improve their housing and I'm always busy with something to do. Very generous people I share a village with and they do appreciate a hard worker. My fellow villagers are super nice. Would highly recommend both villages on Indy, Kalayaan with Alaskan Bob or Holmside with VcBoy. At either you will be treated respectfully and helped when you want help yet also given the freedom to discover what you like best in Wurm.
